What are Bounty Overnight Oats?

Bounty oats are inspired by the UK and Canada-based Bounty Bars. These treats feature coconut bars dipped in chocolate. That translates into chocolate coconut overnight oats which are what I’m all about these days!

If you love the flavors of coconut and chocolate, these may be your new favorite overnight oats!

You can find the full printable recipe, including ingredient quantities, below. But first, here are some explanations of ingredients and steps to help you make this recipe perfect every time.

  • Oats — I prefer the texture of rolled oats (also known as old-fashioned oats). You can substitute instant oats, but you’ll need to add more of them (up to 2 tablespoons more).
  • Coconut milk — You can use full-fat or lite coconut milk. If you prefer fewer calories, you can use almond milk and add a drop or two of coconut extract.
  • Coconut — You’ll need some shredded coconut. I prefer finely shredded coconut and will even run it through a food processor for a few seconds to get it just right. But you can use long shreds of coconut flakes. I use unsweetened, but sweetened will work fine, too.
  • Syrup — You’ll need a tablespoon or so of maple syrup, but you can substitute agave nectar.
  • Salt — I like to add a pinch of salt to the oats to enhance their sweetness. I also add some flaky sea salts on top of the finished dish for a dramatic effect and flavor.
  • Chocolate — To make that chocolate topping, we’ll combine coconut milk with dairy-free semi-sweet chocolate chips.

How to Make Bounty Overnight Oats

  1. Stir together oats, coconut flakes, syrup, coconut milk, and salt.
  2. Distribute the oats into three serving dishes.
  3. Take a taste test for sweetness. Add a teaspoon of more syrup if you prefer it sweeter.
  4. Make the ganache topping by combining coconut milk and chocolate chips in a microwave-safe container.
  5. Cook and cover until the chocolate melts.
  6. Stir to create a creamy mixture and pour over overnight oats.
  7. Cover and refrigerate for one hour, up to overnight.
  8. Before serving, top with flaky sea salt.

Storage Tips

Cover any unused portions and store in the fridge for up to 3 or 4 days. You can then serve the leftovers chilled with a spoon. You can freeze overnight oats, although I prefer to do so when I’ve stored it in a plastic jar (rather than a glass jar). To thaw frozen oats, transfer the bowl to the fridge overnight.
