I absolutely love a good soup. There is not one week in our house that I don’t put some kind of soup recipe o my meal plan. I feel that there is something comforting in a mug of hot delicious soup when you just want to curl up on the couch and seek comfort. This vegan vegetable soup recipe takes no more than 30 mins to make and couldn’t be tastier! This immune-boosting vegetable soup recipe is jam-packed with plant-powerhouse veggies

  • broccoli,
  • peas,
  • carrots,
  • celery,
  • onions,
  • potatoes,
  • and antioxidant herbs that I love.

Its soothing broth is light, creamy, and flavorful, a fantastic recipe when you are feeling under the weather or any day of the week really. I always make a huge batch of soup and freeze the leftovers to grab and reheat whenever I feel like having something delicious and fast on those days when I am short on time. Above all the addition of cashew cream makes it just that much more special. 🙌

Like I said before this dish is easy and fast to do so there is no excuse for buying a packet of ready-made soups in the store! 😉✌.

How to store this soup

After allowing the soup to cool down transfer the soup to an airtight container. Glass or plastic containers with tight-fitting lids work well. Leave about an inch of space at the top of the container to allow for expansion as the soup freezes.

Store the container in the refrigerator for up to 3-4 days or in the freezer for up to 2-3 months.

When ready to eat, thaw frozen soup in the refrigerator overnight, and then reheat it on the stovetop or in the microwave until it reaches a safe temperature of 165°F (74°C).
