Ingredients
- 6 cups spinach
- 2 cups roasted pumpkin slices ((about 15-20 slices))
- 1/4 cup walnut halves
- 1/4 cup pumpkin seeds
- 1/4 cup pomegranate arils
- 1/3 cup blue cheese (crumbled)
- 1/4 cup olive oil
- salt/pepper (to taste)
Instructions

Simply and easy, but so beautiful. We are big fans of pumpkin and squash in our home. Throw away the pumpkin seeds? Never! They’re so good. Ha! I remember when my daughter was little, she would dry them and make jewelry. 🙂
