Weight Watchers Recipe of the Day: Slow Cooker Bananas Foster
Bananas Foster was named and made popular at Brennan's Restaurant in New Orleans back in 1951 by Owen Brennan.
The original dish was invented at Brennan's Vieux Carré Restaurant on Bourbon Street, across from The Old Absinthe House.
I've loved this decadently delicious flaming dessert since the first time I tasted it.
Slow Cooker Bananas Foster
Made with bananas, butter, brown sugar, cinnamon, rum and banana liqueur that are sauteed and then flambeed, this is not the kind of dessert I would ever attempt to make at home.
Until I came across this easy variation for slow cooker bananas foster.
Skinny on Slow Cooker Bananas Foster
Requiring just 5 ingredients and neither booze nor a flame, this lighter healthier version of slow cooker bananas foster was a winner at our house. Rod proclaimed it the kind of dessert "you just don't want to end."
I modified the recipe only slightly, cutting back a bit on the butter and using sugar-free apricot fruit spread instead of jam. If you wanted to shave a point you could skip the butter altogether.
Serve over your favorite vanilla frozen yogurt, ice cream of gelato. I think this slow cooker bananas foster would make a glorious breakfast topping for pancakes, french toast or oatmeal too.

Slow Cooker Bananas Foster Recipe
Deliciously easy, this slow cooker bananas foster was a huge hit when I made it for dessert recently. Enjoy over frozen yogurt ice cream or gelato. I think it would be delicious breakfast topping for oatmeal, pancakes or french toast too.

Ingredients
- 3 ripe firm bananas peeled and cut into 1-inch chunks
- ¼ cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ cup apricot fruit spread
- 1 tablespoon butter, cut into ¼-inch pieces
Instructions
Ideal Slow Cooker Size: 2- to 3-½-Quart.
Coat the slow cooker insert with nonstick cooking spray.
Place the banana chunks, brown sugar and cinnamon in the slow cooker. Toss until the bananas are evenly coated with the sugar.
Dollop teaspoonfuls of the apricot spread over the bananas. Sprinkle on the pieces of butter.
Cover and cook on LOW for 1-½ hours or until the bananas are soft and the sauce is bubbling.
Serve over vanilla frozen yogurt, ice cream or gelato.
