We LOVE pizza around here… no really we LOVE pizza. So, when my family started eating low carb, we had a bit of a pizza adjustment. (Psst… this list will always have all our latest low carb recipes.)

Now, rest easy, we have found our perfect non-slow cooker low carb pizza that I might share one day ;), BUT this Low Carb Crock Pot Pizza Soup is a twist on one of our favorite pizza inspired soups on the site. And, this recipe is SOOO good that even your carb-lovin’ friends will eat it up and ask you for the recipe! (And, what a PERFECT time to tell them about your favorite slow cooker website- wink, wink.)

Ingredients forLow Carb Crock Pot Pizza Soup

  • 1-2 lbs Ground Sausage – Browned
  • 2 Cups Marinara Sauce (We used our favorite low carb sauce.)
  • 14.5 oz Can Beef Broth
  • 1 Cup Water
  • 16 oz Cream Cheese- Cubed
  • 4 oz Mushrooms – Drained
  • 2.25 oz Black Olives – Drained
  • 1 Tablespoon Italian Seasoning
  • 1 Cup Mini Pepperoni (or chopped regular pepperoni)
  • Optional- Garnish Mozzarella

Notes onLow Carb Crock Pot Pizza Soup Recipe

  • If eating low carb, make sure to read labels. Marinara can drastically change the carb count. This is the lowest carb marinara I have been able to find. It is pricey, but it tastes amazing.
  • If you enjoy sausage as much as we do, make sure to use 2 lbs to make your soup extra meaty. If you are a pepperoni fan instead, use 1 lb and double up your pepperoni.
  • We LOVE browning slow cookers for dishes like this, because it lets you brown your meat IN the slow cooker. Don’t worry if you don’t have one, just brown your meat in skillet before crockin’.

FAQs

Can you simmer soup in a crock pot? ›

Slow cookers can transform a few simple ingredients into the most delicious soups by simmering them for hours. This low and slow cooking allows the flavors to mingle, creating rich, flavorful soups perfect for chilly days, nights, or any day you want to enjoy a bowl full of goodness.

Is slow cooker soup better? ›

On the positive side, a slow cooker is a sealed environment. This means there's very little evaporation and your food cooks with the help of moist heat. Technically, this means you're actually cooking your food with flavored steam, which helps to seal in flavor while the soup cooks.

How to stop a slow cooker from being watery? ›

Prop the lid up for evaporation.

While your dinner cooks, prop the lid open a bit so that moisture can escape and thicken the stew naturally without extending the cooking time too much. Skewers or chopsticks between the lid and the crock of the slow cooker work well for this.

How long can you leave soup in Crock-Pot on low? ›

That varies by what's inside the slow cooker and also by the appliance's setting and model, the experts say. Most recipes for all-day cooking call for 6 to 8 hours on low. Quality- (and safety-) wise, another 1 to 2 hours in 'keep warm' mode won't mess things up.

Can you leave soup in Crock-Pot on low overnight? ›

Today's programmable slow cookers often come with the ability to cook food for up to 24 hours, as well as automatic warming settings that can stay on for just as long.

Can you overcook soup in a slow cooker? ›

"When a slow cooker is too full, it may not heat the food evenly," explains Leal. As a result, some parts of the dish may overcook, while others remain undercooked. "This can also increase the risk of foodborne illness, because the food might not reach a safe temperature throughout," she says.

What size slow cooker is best for soup? ›

If you're cooking for yourself or for only two people, a 2 1/2 to 3 1/2-quart slow cooker might be large enough. It's great for smaller amounts of soups and stews. Many slow cooker recipes are written for 6-quart models and can simply be halved for this size.

How do you thicken soup in a slow cooker? ›

As a rule of thumb, dissolve 2 parts cold water and 1 part cornstarch. Add the slurry to your sauce as it simmers in the slow cooker. Cornstarch is always a good way to thicken a sauce or soup but personally I would recommend going a different route as the cornstarch slurry may change the flavor of the meal.

Is it better to thicken stew with flour or cornstarch? ›

Cornstarch has twice the thickening power of flour. When a gravy, sauce, soup or stew recipe calls for flour, use half as much cornstarch to thicken. To thicken hot liquids, first mix cornstarch with a little cold water until smooth. Gradually stir into hot liquid until blended.

Do I need to put water in the bottom of my slow cooker? ›

You DO NOT have to put water in your crockpot in order to use the liners, HOWEVER, it is HELPFUL if you are cooking certain foods for a long period of time(like set- up in the morning, then return after work) such as rice for instance, putting some water at the bottom of the slow cooker and the liner prevents the food ...

How long to simmer in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Does a crockpot get hot enough to simmer? ›

Most dishes take approximately 7-8 hours to reach the simmer point on "Low" and about 3-4 hours on "High." Once the vegetables and meat start to simmer and braise, flavors will infuse and meat will become tender and 'fall off the bone.

What does simmer mean on a crock pot? ›

The definition of a simmer is to cook a liquid just below the boiling point (212°F), with a range of around 185°F to 205°F.

Is low on a crockpot the same as simmer? ›

Both low and high stabilizes at 209°F. The difference is the time it takes to reach that temperature. Low: 7-8 hours to reach the simmer point. High: 3-4 hours to reach the simmer point.
